"Back 2 the Cutting Board" was launched in September 2008 to provide classes, services, information, advice and recommendations for everybody interested in discovering simple ways to include more Organic Raw Foods into their daily nutrition.
"Organic High Raw"
On this site, the value of incrementalism is recognized, and the awareness that people are diverse, have different priorities, and that we're all at varient places along our educational journey through life. So while I personally strive for being 85% -100% of organic, raw foods consumption or "Organic High Raw", I know that for many, this is not their personal goal, despite the clear health benefits of a Organic High Raw Foods Diet. "My goal as an educator is to deliver the tools of knowledge needed for building self confidence and discipline in making wise daily choices in regards to taking personal control and responsibility for your health through nutrition."
Kelli Rose, Founder, "Back 2 The Cutting Board", comes from a professional background rooted in the fitness industries since her early 20's and became a vegan in 1997. At that time, she was approximately 50% Organic Raw, with her cooked foods comprised of mostly tofu based meat alternatives, fruits, vegetables, legumes, grains and sprouted breads. In 2004, Kelli removed soy-based products from her diet after discovering the health dangers of isolated soy protein consumption and in 2007 graduated to being 75% Organic Raw. Since 2008, she has been 75% -100% Organic Raw.
Professionally, Kelli became a Certified Personal Trainer and Group Fitness Instructor in 1995. Over the years in the fitness industry, she also gained certifications in Spinning, Yoga, Turbokick and Aquatics. In 1999, she relocated from the Coachella Valley desert to Studio City to launch her fitness company, "Five Star Fitness" by way of an exclusive contract with CBS Radford Studios, managing and operating CBS's private fitness facility and offering fitness services to their TV talent and CBS associates. Kelli was also featured as a reoccurring "TV Fitness Expert" on Home and Garden television's show, "Smart Solutions".
Her success in the fitness industry took her out of the daily business in the gym into private contracts with clients for exclusive services, including nutrition, supplementation and meal preparation.
In 2003, Kelli relocated to the east coast for a 7 month private contract. She decided to extend her stay to experience the true four seasons of the east coast and partake in the lovely offerings of the beautiful Virginia countryside. Kelli managed a very successful, privately owned health food store and organic deli for three years, in addition to returning to education to become certified as a Surgical Technician. During her time in Virginia, she expanded her knowledge beyond nutrition into the world of vitamins, supplementation, herbs, homeopathy, flower essences, and or course, organic and raw foods!
She returned to the Coachella Valley in August of 2007 with certifications in Vegetarian Nutrition, Alternative and Complementary Nutrition, Herbal Supplementation, and the knowledge and experience gained from working and studying with some of the best master herbalists and holistic practitioners/educators on the east coast.
Kelli also continued her passion for work in the Natural Health Foods industry as a Buyer and Director of Sales & Marketing for Health NutZ Health Foods & Deli until 2009.
Kelli's additional experience and training as a Certified Surgical Technician gives her a unique edge in this business by possessing a working knowledge of pharmacology and medical/surgical procedures and terminology. She uses her experience and training in conventional western medicine to assist those who choose to pursue a holistic or alternative approach to managing their health.
In June 2008, Kelli received her certification as a Raw Foods Chef. Kelli offers both group and private preparation instruction of Raw Food dishes, lectures on the healing benefits of raw foods, and has quickly become a favorite presenter among many of the desert's exclusive country clubs.
Kelli also stays active with her fitness career working as a full time Fitness Director at Trilogy at La Quinta's Santa Rosa Athletic Club, as well as instructing a total of 15 hours of aerobic exercise classes a week, including the Hyatt Grand Champions Agua Serena Spa and World Gym.
Desert residents may recognize her face as a former two time Bob Hope Chrysler Classic Girl (1999 & 2000) and Miss Fantasy Springs (1998). Kelli still actively supports charities and fundraisers, both locally and nationally, though these days, her focus has turned to building awareness and education toward animal welfare/rescue and environmentally protective issues. "My motto has always been no brown eyes or feathers...not only have I chosen to not eat animals, I choose to be a voice in supporting their survival as a species and their rights as inhabitants of this earth, to be treated humanely by man."
